Icecream season

Thanks Mum for my christmas present.

From last year.

I asked for, and she bought me, an icecream maker. And now, finally, there's a reason in my life for warm weather. 

Today's recipe for mango-coconut sorbet is fructose-friendly, in that it is made with whole fresh fruit and has no cane sugar added.

  • 2 very ripe mangoes
  • 1 can coconut cream
  • 1/2 cup of dextrose sugar (or to taste)

Blend together and add to the icecream maker until churned and frozen. Then try and hide it from the twelve year old. (Actually, she loves it so much that she said, "Mum, you could probably hide protein powder and stuff in here and I'd still eat it.")
